......it’s not officially autumn until you scour the farms for a perfect pumpkin.
Pumpkin picking is fall’s annual rite of passage. No matter how crisp the air or colorful the leaves, it’s not officially autumn until you scour the farms for a perfect pumpkin. Of course, no trip would be complete without a hayride. Plenty of both can be found close to home!

Dearborn Farm’s
Butternut Squash Ravioli with Swiss Chard and Gorgonzola
2 Boxes Dearborn’s butternut squash ravioli
2 Bunches Rainbow Swiss Chard, roughly chopped
3 Slices Thick-sliced Applewood smoked bacon, diced
1 Shallot, diced
2 cups Heavy cream
Pinch Salt, Black Pepper, Nutmeg
2 Tablespoons Canola Oil
1 Cup Gorgonzola, crumbled
½ Teaspoon Fresh thyme, chopped
As-needed All-purpose flour
In large sauté pan, heat oil over medium-high heat, add bacon. Render out fat until bacon is almost cooked. Add shallots, sauté until translucent. Add fresh thyme and chard. Sauté until chard wilts. Dust flour over mixture till roux forms. Slowly add cream, whisking until incorporated. Let simmer to loosen. Season with salt, pepper, and nutmeg. Boil ravioli for 5-7 minutes. Plate six ravioli, top with mixture and crumbled gorgonzola. (Serves 4)
